Hydrocolloids · Food pairing guide
What goes with Agar-Agar?
Agar is a seaweed-derived hydrocolloid used to structure the water phase of a preparation. Pure culinary powder supplies almost no flavour at working concentration, but creates a distinct, relatively brittle bite. Powder, flakes and proprietary blends differ in strength and hydration requirements; the weight of finished liquid, suspended pulp and other gums all matter when designing the set.

Pairing principles
What pairs well with Agar-Agar?
Choose agar when a precise slice, a short-breaking jelly or a fluid condiment improves the dish. Creamy coconut, fruit pulp and tea provide flavour while the gel controls where liquid reaches the palate. Avoid treating it as an equal-weight replacement for gelatine: a preparation that needs an elastic, melting texture usually requires a different formulation.
