What goes with Agave Syrup?
Light agave syrup is a concentrated, fluid sweetener made from processed agave carbohydrates. Its sugar balance and water content vary with manufacture; it contributes intense sweetness but little fat, salt or body from suspended solids. Treat it as a liquid ingredient when formulating batters and frozen mixtures. Pale syrup keeps citrus and delicate tea clearer than an amber product with stronger cooked notes.

Pairing principles
What pairs well with Agave Syrup?
Use acidity, controlled bitterness or chile heat to give the sweetness an endpoint. Agave disperses well in the aqueous part of cold drinks and dressings, whereas incorporation into oil requires an emulsion. Dairy tang and roasted aromas can carry a slightly fuller dose. For crisp confectionery, include a suitable crystallising sugar or other structure rather than expecting neat agave to set hard.
