What goes with Almond Flour?
Fine almond flour is milled almond kernel with much of its natural oil and protein retained. It supplies flavour, richness and fine particles rather than wheat-like gluten structure. Blanched flour gives a pale, relatively smooth crumb; skin-on meal is darker and coarser. Defatted almond powders absorb and bind differently and cannot simply replace this full-fat product by volume.

Pairing principles
What pairs well with Almond Flour?
Eggs, a measured starch fraction or another appropriate binder are needed when the preparation must hold a defined shape. Tart fruit, dark cocoa and citrus peel keep rich almond batters from feeling heavy. Savoury uses work best when the nut flavour is part of a cooked filling or crumb, with allium sweetness, cultured dairy or a restrained bitter herb note.
