What goes with Beef Stock?
Roasted bones, meaty trimmings and aromatic vegetables produce a darker, more assertive liquid than white chicken stock. Marrow contributes fat, while collagen-rich material can supply gelatin, but neither quantity is fixed. The working stock should be clean and pourable before reduction. A purchased beef bouillon or mixed veal demi-glace needs its own dilution and salt assessment.

Pairing principles
What pairs well with Beef Stock?
Softened alliums, carrot and celery bring distinctions within the browned base; thyme supplies a dry herbal edge that survives a small dose. Slow-cooked beef shares its long savoury finish. Pecorino, kombu or coffee can extend that finish in contrasting ways, but they should not all be added at full strength: salt, marine notes and roast bitterness need separate adjustment.
