What goes with Brown Butter?
Brown butter (beurre noisette) is produced by heating butter until its water evaporates and suspended milk solids undergo controlled Maillard reactions. Lactose reacts with amino acids to generate pyrazines, furans, maltol, diketones and sulfur-containing volatile compounds. The remaining butterfat acts as a solvent for these lipid-soluble aroma molecules, greatly enhancing flavour persistence. Unlike clarified butter, brown butter intentionally retains the toasted milk solids responsible for its characteristic hazelnut aroma.

Pairing principles
What pairs well with Brown Butter?
Brown butter contributes roasted complexity, fat and aromatic persistence while enhancing ingredients with naturally sweet, earthy or nutty characteristics. Its Maillard-derived compounds reinforce roasted vegetables, shellfish, pasta and nuts while acidity from citrus provides balance through aromatic contrast.
