What goes with Cider?
Dry fermented apple cider at approximately 4–6% alcohol contains water, fruit acids, fermentation aromas and a variable amount of residual sugar. Some examples also provide noticeable apple-skin tannin. This ingredient is alcoholic cider, not unfermented American apple cider or apple juice. Choosing a dry bottle establishes a savoury starting point, although dryness alone does not describe its acidity or bitterness.

Pairing principles
What pairs well with Cider?
Pork, chicken, mussels and cream provide rich or savoury surfaces against which cider's apple acidity becomes useful. Mustard supplies a sharper aromatic partner without requiring extra sweetness. Match the cider to the cooking method: clean, moderately acidic examples suit reduction better than intensely bitter or strongly flavoured bottles. Balance the reduced liquid itself before combining it with a delicate main ingredient.
