What goes with Comté?
Comté is a traditional French AOP cooked pressed cheese produced from raw Montbéliarde and French Simmental cow's milk in the Jura Massif. Large wheels mature for a minimum of 120 days, although premium examples commonly age for 12–36 months. Seasonal pasture, altitude, milk composition and cellar maturation create substantial aromatic variation, making Comté one of the most terroir-expressive European cheeses.

Pairing principles
What pairs well with Comté?
Comté combines mild sweetness, balanced saltiness, strong umami and broad fruity, roasted and vegetal aromatics. Apples, pears and honey lift its sweet-fruity character; walnuts and brown butter echo its roasted notes; potatoes, onions and mushrooms reinforce its savoury depth. Mature Comté can support porcini, truffle and cured meats, but highly dominant accompaniments should be controlled so its layered aroma remains perceptible.
