Grains & Starches · Food pairing guide
What goes with Cornstarch?
Cornstarch is a fine extracted maize starch used in small amounts to control liquid and surface texture. It has very little aroma of its own. Water and heat turn a dispersed slurry into a thickened phase; cooling can give a firmer set. A dry coating behaves differently, forming a delicate crust as moisture leaves during frying.

Pairing principles
What pairs well with Cornstarch?
Use the smallest amount that gives the intended contact: a glaze clinging to shrimp, a thin protective layer on chicken, or a custard that holds a filling. Aromatic oils still need dispersing and cannot be thickened on their own by starch. Delicate fruit can lose perfume during extended boiling, so prepare the flavoured liquid first and finish the binding step promptly.
