What goes with Crème Fraîche?
Crème fraîche is a cultured dairy product obtained by fermenting high-fat cream with mesophilic lactic acid bacteria, primarily Lactococcus lactis subsp. lactis and cremoris together with aroma-producing Leuconostoc species. Fermentation lowers the pH to approximately 4.5–4.8 while maintaining a fat content typically between 30–40%, creating a highly stable fat-in-water emulsion with excellent thermal resistance.

Pairing principles
What pairs well with Crème Fraîche?
Crème fraîche simultaneously contributes fat, acidity and emulsion stability. Its lipid phase efficiently carries fat-soluble aroma compounds while lactic acidity refreshes the palate without dominating delicate flavours. It performs equally well in hot sauces, cold emulsions and pastry.
