What goes with Dijon Mustard?
Dijon is a hydrated mustard-seed paste whose fine particles give body as well as pungency. Vinegar, water and salt form its continuous liquid phase; seed solids contribute a slightly oily, dense texture. The balance differs appreciably between jars. Taste the actual product before using it in an emulsion, because a strongly acid mustard needs less added vinegar than a milder one.

Pairing principles
What pairs well with Dijon Mustard?
Use Dijon to interrupt rich, fatty bites and to connect oil with a water-based dressing. Roasted meat, egg yolk and nut oils provide weight beneath its sharpness; mild starch gives the palate somewhere to rest. Sweetness can cushion its heat but should remain restrained in savoury food. In dairy or frozen preparations, allow for cold and fat muting the initial sensation.
