Fats · Food pairing guide
What goes with Duck Fat?
Duck fat is obtained by slowly rendering the subcutaneous and abdominal adipose tissue of duck. It consists predominantly of monounsaturated fatty acids, primarily oleic acid (C18:1), together with palmitic and stearic acids and smaller amounts of linoleic acid. Unlike butter, duck fat contains virtually no water or milk proteins, providing greater thermal stability, excellent heat transfer and reduced protein-mediated browning.
