Herbs & Spices · Food pairing guide
What goes with Dukkah?
Dukkah is a loose mixture of toasted nuts, seeds and spices rather than a smooth paste. This version centres on hazelnut, sesame, coriander and cumin, with salt adjusted to the purchased blend. Other nuts or spices change its balance. Its coarse particles supply both aromatic fat and a distinct granular bite, so the mixture must be evaluated as food texture as well as seasoning.

Pairing principles
What pairs well with Dukkah?
Use dukkah with a moist centre that can carry a dry, aromatic edge: eggs, cultured dairy, ripe vegetables or tender fish. Decide whether the grains should remain brittle, become an integrated filling or be bound into a wafer. Add acid in another component when possible; pouring it through the entire blend sacrifices the contrast between toasted particles and a yielding base.
