What goes with Fish Stock?
Clean fish frames and heads give a light marine broth whose body depends on the species and inclusion of skin and connective tissue. It should not be assumed to contain almost no gelatin, nor expected to gel reliably. White-fish sweetness is the focus; shellfish shells, oily fish, smoked fish and dried bonito would produce materially different stocks.

Pairing principles
What pairs well with Fish Stock?
Fennel and bay add aromatic definition, while dry white wine lifts a sauce made from the stock. Lean fish can be poached in it without introducing an unrelated meat flavour. Earthy mushrooms, mature miso or warm seeds need especially measured treatment: they can provide a useful deeper register, but the small marine flavour should remain detectable after the preparation is assembled.
