What goes with Ginger?
Ginger (Zingiber officinale) is the underground rhizome of a tropical plant, rich in starch, dietary fibre, phenolic compounds and essential oils. Its characteristic pungency originates primarily from gingerols, especially 6-gingerol. During drying or prolonged heating, gingerols are converted into shogaols, while thermal degradation also produces zingerone, a sweeter aromatic compound. Volatile oils including zingiberene, β-sesquiphellandrene, citral and borneol contribute citrus, woody and floral aromas.

Pairing principles
What pairs well with Ginger?
Ginger contributes freshness, pungency and aromatic lift while balancing richness and suppressing undesirable fishy or fatty notes. Its volatile compounds pair exceptionally well with seafood, poultry, fruit and fermented ingredients, while its pungency enhances flavour perception without the intense burn associated with capsaicin.
