What goes with Gorgonzola?
Gorgonzola PDO is an uncooked, blue-veined cheese made exclusively from pasteurised whole cow's milk. Its white to pale-yellow paste contains blue-green veins produced by Penicillium roqueforti. The PDO specification requires at least 48% fat in dry matter and identifies the grey-pink rind as non-edible. Gorgonzola Dolce has a soft, creamy and spreadable paste, while Gorgonzola Piccante is matured longer and develops a firmer, more friable structure.

Pairing principles
What pairs well with Gorgonzola?
Gorgonzola combines high aromatic intensity, fat, saltiness and persistent umami. Sweet fruit and honey soften its pungency, while fruit acidity refreshes the palate. Walnuts reinforce earthy and fermented notes while adding texture. Beetroot and spinach connect with its earthy, mineral character. Prosciutto Crudo provides savoury depth but should be used carefully to avoid excessive cumulative saltiness. Pairings should normally introduce one clear sweet, acidic or textural counterpoint rather than several equally pungent ingredients.
