What goes with Gouda?
Gouda is a pressed, brine-salted, washed-curd cheese generally made from cow's milk. Depending on maturation, its paste ranges from supple and sliceable to hard, brittle and crystalline. The generic name Gouda is produced internationally, while Gouda Holland PGI must be made from Dutch cow's milk, pasteurised at a minimum equivalent of 72°C for 15 seconds and naturally matured in the Netherlands. It contains 48–52% fat in dry matter and must mature for at least 28 days. Farmhouse Gouda made on the farm from raw milk may qualify as Boerenkaas TSG, provided it meets the traditional production requirements.

Pairing principles
What pairs well with Gouda?
Young Gouda's mild dairy sweetness works particularly well with juicy, aromatic fruits such as cherry, peach and apricot. Their acidity prevents the combination from becoming flat without overpowering the cheese. Aged Gouda supports firmer contrasts: tart apple and pear refresh its dense fat and salt; mustard provides acidity and pungency; fig and dark chocolate connect with its caramelised, nutty maturation notes. Button Mushroom reinforces savoury depth, while spinach contributes mineral character and restrained bitterness. Smoked Gouda requires simpler accompaniments because additional smoke, salt or cured flavours can quickly dominate.
