What goes with Hibiscus?
Hibiscus here is the food-grade calyx of Hibiscus sabdariffa, commonly sold dried for roselle or jamaica infusions. It does not include ornamental hibiscus flowers or hibiscus leaves. Organic acids contribute tartness and anthocyanins contribute red colour. The flavour profile refers to an unsweetened infusion of dried calyces; sweetened bottled drinks have a different balance.

Pairing principles
What pairs well with Hibiscus?
Use hibiscus as an acidic botanical element, with dairy richness, fruit sweetness or a clearly savoury partner. Strain when the finished texture should be smooth, retaining the calyces only in preparations designed around their chew. Judge the whole plate: an acidic sauce already containing citrus may need less hibiscus, even when its colour looks appealing.
