Cured Meats · Food pairing guide
What goes with Jamón?
Jamón is Spain's traditional dry-cured ham produced from the hind leg of the pig through salting, controlled drying and extended maturation. The category includes Jamón Serrano, Jamón Ibérico and the premium Jamón Ibérico de Bellota (commonly known as Pata Negra). During curing, proteolysis and lipolysis generate peptides, amino acids and aromatic compounds responsible for its intense umami, sweetness and characteristic nutty aroma. Ibérico ham contains significantly higher intramuscular fat and oleic acid than Serrano, producing a softer texture and greater aromatic persistence.

Pairing principles
What pairs well with Jamón?
Jamón combines sweetness, umami, delicate saltiness and rich cured aromas. Sweet fruit, aged cheeses, nuts and fresh vegetables balance its richness while preserving its aromatic complexity. Premium Ibérico benefits from simple accompaniments that allow its maturation character to remain dominant.
