Fish & Seafood · Food pairing guide
What goes with John Dory?
John Dory yields compact, moderately firm white fillets from a very bony fish. The flesh is lean, gently sweet and moist when cooked carefully, with a finer marine flavour than oily schooling fish. Fillet thickness varies markedly across the portion, so shape and trimming matter more than a nominal portion weight. The head and frame are useful for a clean fish stock when properly prepared, but the large head should not be mistaken for generous edible yield.

Pairing principles
What pairs well with John Dory?
Build around the fillet's difference between a lightly browned exterior and a yielding centre. Clam liquor or reduced wine can give a sauce length without a large quantity of fat, while potato supplies a quiet base. The more adventurous accompaniments work in distinct small components: an earthy cep ribbon, a few chanterelles, warm apple dice or a bitter orange-glazed vegetable. Avocado provides creamy fat; the acidity in that plate must come from lemon or another explicitly acidic ingredient.
