What goes with Kinome?
Kinome is the young leaf or tender shoot of Japanese pepper, Zanthoxylum piperitum, and is not the powdered fruit spice called sansho. It has a vivid citrus-green aroma and a variable, generally gentler pungent impression than the fruit. Leaf-focused research shows that its sanshool profile and intensity differ from fruit, so strong numbing claims based on peppercorns are inappropriate here.

Pairing principles
What pairs well with Kinome?
Mild bamboo, white miso and delicate fish provide clear backgrounds for the leaf. Fatty or creamy carriers allow wider distribution, while tart fruit and a chilled spirit drink can provide more unusual contexts if the leaves have a material role. Keep peppercorn powder, other Zanthoxylum species and unrelated citrus leaves separate when assessing identity and evidence.
