What goes with Madeira?
Medium-dry Verdelho-style Madeira combines wine acidity, moderate residual sweetness and the warmth of fortification, usually around eighteen to twenty percent alcohol. Its concentrated flavour comes from maturation as well as grapes: toasted nuts, dried citrus and a gently caramelised impression can coexist without the wine tasting like dessert syrup. Dark colour alone does not establish its sweetness or its suitability for reduction.

Pairing principles
What pairs well with Madeira?
Madeira works particularly well when a preparation has roasted surfaces, earthy flavours or a rich emulsion that benefits from acidity. Match its concentration to the food: a teaspoon of reduction can dominate a delicate mousse while a braise needs a larger liquid foundation. For sweet applications, keep supporting sugar restrained and use toasted grains or nuts to extend the mature wine character.
