Sweeteners · Food pairing guide
What goes with Malt Extract?
This concentrated barley syrup brings dissolved grain sugars, a little water and persistent cereal flavour in a thick, sticky form. It contributes sweetness and body together, so replacing dry sugar with an equal weight changes the liquid balance. Non-diastatic extract provides flavour and fermentable sugars but no active starch-degrading enzymes, so it does not replace a diastatic dough improver.

Pairing principles
What pairs well with Malt Extract?
Milk and cream soften the cereal edge, while dark chocolate gives its sweetness a bitter counterweight. Raisins extend the dried-fruit impression and flour carries the syrup through a tender crumb. In savoury cooking, use much smaller amounts: seafood stocks, cooked yeast and concentrated dairy need a toasted accent rather than a sweet coating that obscures their own flavour.
