What goes with Milk?
Milk is a natural oil-in-water emulsion composed of approximately 87% water, 3–5% fat, 3–4% protein and 4.5–5% lactose together with minerals, vitamins and bioactive compounds. Around 80% of the proteins are caseins organised into casein micelles, while the remaining proteins are whey proteins, primarily β-lactoglobulin and α-lactalbumin. Fat is dispersed as microscopic globules surrounded by phospholipid membranes that contribute to emulsion stability.

Pairing principles
What pairs well with Milk?
Milk contributes moisture, fat, protein functionality and mild sweetness while moderating acidity, bitterness and pungency. Its neutral flavour makes it an excellent carrier of aromatic compounds and a structural ingredient in sauces, soups, bakery and dairy preparations.
