Sweeteners & Chocolate · Food pairing guide
What goes with Milk Chocolate?
Milk chocolate combines cocoa ingredients, sugar, milk solids and milk fat in a continuous fat phase that usually includes cocoa butter. The cocoa percentage includes cocoa butter and does not measure bitterness by itself. A 35–45% couverture is a useful working reference, but sweetness, fluidity and dairy character still depend on the complete formulation and manufacturer.

Pairing principles
What pairs well with Milk Chocolate?
Treat milk chocolate as both a sweet flavour and a setting ingredient. Tart fruit, coffee, toasted nuts and selected savoury elements can interrupt its rich finish, but the partner must remain perceptible after chilling. Liquids alter ganache texture; nut oils soften crystallisation. A narrow, controlled layer often gives more definition than a large volume of very sweet chocolate cream.
