What goes with Rapadura?
Rapadura is whole-cane sugar made by concentrating sugarcane juice without separating all of its molasses. It may be supplied as a solid block or in granules. Alongside sucrose, retained cane solids contribute brown colour and a malty, molasses-like character; moisture and composition vary, so it should not be treated as identical to refined sugar.

Pairing principles
What pairs well with Rapadura?
Use the whole-cane flavour with roasted nuts, tart cooked fruit or richly flavoured meat. Citrus can balance its persistent sweetness in a savoury glaze, while salt should be kept proportionate to the reduced sauce. In delicate desserts a large dose can dominate: it is an aromatic ingredient as well as a sweetener.
