What goes with Salt Cod?
Dry-salted Atlantic cod has lost moisture and absorbed substantial salt, producing firm flesh with a persistent marine savouriness. Refrigerated soaking restores water and removes excess salt, but the result is not identical to fresh cod: its fibres remain more defined and its flavour more concentrated. Unsalted stockfish is a different preserved product and cannot follow the same desalting assumptions.

Pairing principles
What pairs well with Salt Cod?
Use neutral starch, gentle dairy or olive oil as a broad foundation, then add allium or tomato in a supporting role. The remaining salt determines the rest of the seasoning, including olives, capers and cured meats. Strongly sweet or spicy constructions work best in small portions with clear textural contrast, keeping the fish present as savoury flesh rather than an indistinct salty paste.
