What goes with Sauerkraut?
Sauerkraut is shredded cabbage preserved through salted fermentation, with a sour liquid trapped between softened leaves and firmer ribs. Plain cabbage and salt are the starting point for this profile; wine, caraway, sugar and smoked meat belong to individual preparations. Refrigerated uncooked kraut and pasteurized jarred products can differ markedly in bite. Neither should be confused with fresh cabbage dressed in vinegar.

Pairing principles
What pairs well with Sauerkraut?
Fatty pork and oily fish benefit from the cabbage’s sour interruption, while potato and bread provide a mild, absorptive counterweight. Apples add sweetness and a separate fruit aroma rather than merely more acid. In unfamiliar constructions, keep the cabbage visible or texturally legible: a measured layer within a terrine, dumpling or crisp cake conveys its identity better than an anonymous sharp sauce.
