What goes with Shaoxing Wine?
Unsalted drinking-quality Shaoxing huangjiu is an amber fermented grain wine with rounded cereal, dried-fruit and savoury notes. Its alcohol, acidity and sweetness vary with style and age; it is not a neutral rice spirit. Salted cooking bottles add another seasoning variable and should be measured with their label in mind rather than treated as interchangeable with this reference form.

Pairing principles
What pairs well with Shaoxing Wine?
Chicken and pork offer enough savoury substance to carry Shaoxing's fermented grain character. Ginger keeps fatty preparations lively, while soy sauce reinforces their savoury finish. Grain pastes and vegetables can also work when the wine is part of a complete filling or cooking liquid, but excessive sweetness, dark soy or powerful spices can obscure the particular wine aroma.
