Wine · Food pairing guide
What goes with Sherry?
Amontillado is a fortified wine that combines an initial period of biological ageing with later oxidative maturation. This dry reference brings water, alcohol and concentrated wine character, with little of the sweetness associated with cream sherry or Pedro Ximénez. Bottle styles differ in strength and concentration. Choose a drinking-quality wine and avoid salted cooking sherry, whose seasoning is difficult to control.

Pairing principles
What pairs well with Sherry?
Mushrooms, poultry skin, toasted almonds and cream give Amontillado's nutty dryness a culinary setting. Acidity from fruit can open a rich dessert, while a small sweet addition may be needed to build a confection rather than relying on the wine. Keep strongly smoked, bitter or heavily spiced components controlled so the sherry remains legible instead of disappearing into a general dark sauce.
