What goes with Sichuan Pepper?
Sichuan pepper consists of the aromatic fruit husks of culinary Zanthoxylum species. This profile uses dried red husks, with the hard black seeds and stems removed. The husks supply citrus-floral fragrance and a spreading tingling sensation that differs from chilli burn or black pepper's bite. Green huajiao and fresh clusters have their own aromatic intensity and are not interchangeable by volume.

Pairing principles
What pairs well with Sichuan Pepper?
Nut pastes and pork fat distribute Sichuan pepper while giving its sharp fragrance a roasted or savoury foundation. Chilli contributes a separate hot sensation and should be adjusted independently. Citrus, mushrooms and gently sweet glazes let the aromatic side emerge without requiring heavy heat. Give delicate fish or dairy a strained infusion and use coarse fragments only when the texture of the dish can support them.
