What goes with Sourdough Starter?
A liquid sourdough starter combines flour, water, yeasts and lactic acid bacteria. At 100% hydration it contributes equal weights of flour and water, which must be included in the dough calculation. The organisms, flour and feeding schedule shape its acidity and activity. Unfed discard contributes fermented flour and acid but cannot be assumed to raise dough reliably.

Pairing principles
What pairs well with Sourdough Starter?
Rye and wheat supply different dough structures, while honey, olive oil and salt change flavour, fermentation and crust. Choose maturity for the intended result: active culture for a loaf, or clean, recently stored discard when acid and flour are the useful parts. A sourdough sauce and a fermented bread need different thickness, heat and timing controls.
