What goes with Sprat?
Sprats are small oily fish whose compact size makes skin, flesh and fine bones a closely integrated bite. They are not simply a smaller substitute for every anchovy or sardine product. Fresh sprats, smoked tins and Scandinavian spiced sprat fillets differ greatly in texture and salt, so the exact product must be identified before using a recipe. The baseline describes plain cooked fresh sprat; preserved applications carry their own form notes.

Pairing principles
What pairs well with Sprat?
Small scale is central to this fish. Crisp bread, onion and potato can give its powerful flavour space without demanding a large fillet presentation, and dairy can distribute preserved-fish flavour through a filling or gratin. More unusual combinations work best in similarly small structures: intact pike roe inside a sprat cream, preserved lemon in a warm fennel garnish, or saffron and culinary huacatay in separate accompanying sauces. A thin beer batter is reserved for fresh cleaned sprat and should remain lighter than the fish inside it.
