What goes with Sumac?
Ground culinary sumac is a burgundy dried-fruit seasoning with a tart taste and a fine, slightly fibrous texture. This profile uses commercially prepared Rhus coriaria, preferably without added salt. It supplies acidity as well as berry-like aroma and a little drying astringency. Unlike citrus juice, a spoonful contributes dry particles with relatively little extra liquid to a dish.

Pairing principles
What pairs well with Sumac?
Sumac is particularly useful against sweet roasted vegetables, rich onions, nut oils and bread. Mix it into a dressing when broad coverage matters, or use a thin surface layer where a sharp first bite is welcome. Since it contributes its own acidity, taste before adding a full measure of lemon or vinegar. Drain watery vegetables so they do not dilute the coating.
