What goes with Umeboshi?
Umeboshi contains soft, intensely sour and salty ume flesh around a hard stone. Red shiso may colour and perfume the fruit, while some commercial versions add honey or other sweeteners. The flesh provides pulp and body that the strained packing liquid, umezu, does not. Umezu is a sour salted fruit liquor, not an interchangeable spoonful of fruit paste.

Pairing principles
What pairs well with Umeboshi?
Plain rice, cucumber and nori provide restrained backgrounds for its concentrated sourness. Fatty or creamy components round that edge, while fresh shiso gives a greener aromatic finish. Mash the flesh for even seasoning, or leave tiny pieces for deliberate acid bursts. A diluted sauce can carry the fruit through a dish without turning every mouthful into a full-strength pickle.
