What goes with Wasabi?
Fresh cultivated wasabi rhizome is a moist swollen stem whose finely grated flesh produces a pale green paste. Its flavour combines vegetal sweetness with a rapid, nose-lifting pungency. This is distinct from green-dyed horseradish mixtures and mustard-based powders, which can deliver a different aroma and strength. The ungrated rhizome is firm; the serving paste should be very fine.

Pairing principles
What pairs well with Wasabi?
Put fresh wasabi in direct contact with a mild, moist ingredient that can carry a small dose clearly. Fish, avocado, rice and restrained soy seasoning are natural starting points. For warm dishes, introduce it after cooking or inside a cool component. Large amounts of mustard, raw garlic, smoke or chilli make its subtler vegetal notes difficult to distinguish.
