What goes with Whey?
Fresh sweet whey is the pale, watery liquid separated from rennet-set cow-milk curds. It carries lactose, dissolved minerals and residual whey proteins, with little of the fat and casein richness of milk. Its mild dairy sweetness and faint cheesemaking aroma differ markedly from the sour liquid drained from yogurt; neither should be confused with concentrated whey powder.

Pairing principles
What pairs well with Whey?
Use neutral starches, eggs and restrained sweeteners to make whey perceptible: flour gives it structure, while egg supplies the setting power the liquid lacks. Mild vegetables and beans accept a dairy cooking liquid without requiring cream. Add sourness separately when a dish needs it, and keep powerful smoke, excessive salt and concentrated roast flavours from overwhelming the delicate starting material.
