What goes with Yogurt?
Yogurt is a fermented dairy product obtained through the controlled activity of Streptococcus thermophilus and Lactobacillus delbrueckii subsp. bulgaricus. During fermentation, lactose is converted into lactic acid, lowering the pH to approximately 4.4–4.6 and destabilizing casein micelles to form the characteristic protein gel. The final product contains water, milk proteins, milk fat, lactose, lactic acid, minerals and volatile compounds including acetaldehyde, diacetyl and acetoin. Greek and strained yogurts contain significantly higher protein concentrations due to whey removal.

Pairing principles
What pairs well with Yogurt?
Yogurt contributes acidity, moisture, protein functionality and fat simultaneously. Lactic acid gently modifies muscle proteins, making yogurt an effective marinade for meat while preserving tenderness. Its protein-fat matrix softens bitterness, moderates spicy heat and efficiently carries volatile aroma compounds.
