Baking & Leavening · Food pairing guide
What goes with Baking Soda?
Sodium bicarbonate is a single alkaline ingredient, without the built-in acid mixture of baking powder. In moist acidic batters it can release carbon dioxide; it also changes pH, affecting colour, browning and texture. These are separate functions. A noodle dough, a honeycomb confection and a cultured-dairy cake therefore require different formulations and cannot share a universal dose.

Pairing principles
What pairs well with Baking Soda?
Use acid-bearing partners when gas generation and residual tang are part of the design. Natural cocoa differs from alkalised cocoa, and cultured dairy varies in acidity. For non-leavening applications, explain the actual pH-dependent effect and retain the preparation’s measured formula. A salty garnish or a rich sauce does not neutralise bicarbonate simply by tasting strong.
