What goes with Molasses?
Molasses is the dense residual syrup from cane-sugar production, retaining dark flavouring material alongside sugar and water. Unsulphured dark molasses gives a useful balance of sweetness, bittersweet depth and viscosity. Blackstrap can be markedly more bitter and mineral-tasting, so it is not an automatic replacement. Date or pomegranate molasses are different fruit concentrates and do not share this reference form.

Pairing principles
What pairs well with Molasses?
Ginger, rye and rum give the dark syrup aromatic detail; pork fat and dairy soften its bitter edge. Acid helps a glaze feel less heavy, but sharp vinegar and bitter blackstrap together can become harsh. Choose one dominant dark element when combining it with smoke or coffee, and provide a lighter texture or clean acidic component to keep the mouthful legible.
