What goes with Black Cardamom?
Black cardamom here means the large, dark, ridged pods of Amomum subulatum sold smoke-cured for savoury cooking. Its clustered seeds and tough shell contribute a smoky, resinous aroma with a cooling camphor edge. It is a different spice from green cardamom. Products sold under similar names can differ in species and drying process, so choose a labelled smoked form.

Pairing principles
What pairs well with Black Cardamom?
Black cardamom is most convincing where there is enough savoury depth or sweetness to carry its smoke. Ginger supplies a fresher, hotter counterpoint; cumin and browned onions give an earthy base. Cream can soften the delivery but cannot erase an overdose. In sweet applications, keep the infusion particularly restrained so browned dairy or grain remains recognisable beneath the resin.
