What goes with Cocoa Powder?
Pressing cocoa liquor removes much of its cocoa butter; milling the remaining cake produces a powder containing cocoa solids, fibre, protein and residual fat. Fat content varies with the product. Natural cocoa retains appreciable acidity, while alkalisation changes acidity, colour and flavour. Neither type is interchangeable with sweetened drinking chocolate, chocolate couverture or pure cocoa butter.

Pairing principles
What pairs well with Cocoa Powder?
Choose sweetness, fat and liquid separately: cocoa brings pronounced roast flavour without supplying the sugar or full fat content of chocolate. Dairy and nuts soften its dry finish; fruit preserves contrast through acidity or perfume. In savoury preparations, a measured amount can connect browned surfaces and earthy fillings. Its water demand and acidity must also fit the dough or sauce.
