What goes with Dashi?
Awase dashi is an aqueous extraction of kombu and dried, smoked fish flakes. It contains very little fat and lacks the gelatinous body of a reduced meat stock. Kombu supplies savoury depth; katsuobushi adds a separate dried-fish aroma. Mushroom-only, kombu-only and commercial instant versions differ substantially, especially in smoke, colour and added salt.

Pairing principles
What pairs well with Dashi?
Use dashi to connect ingredients through a light savoury liquid without covering their textures in fat. Soft tofu, mushrooms and steamed fish accept its flavour readily; miso or soy provides additional seasoning. Bitter greens and acidic components require a restrained concentration. The finished dish may be salty, but plain homemade dashi should not be treated as a brine.
