What goes with Tofu?
Plain tofu is a water-rich gel of coagulated soy proteins containing dispersed soybean fat. Firm tofu has been pressed sufficiently to hold slices while retaining a moist interior. Brand, coagulant and pressing change density and brittleness, so equal pack weights do not imply equal drainage. Its restrained bean flavour makes surface treatment and seasoning distribution especially noticeable.

Pairing principles
What pairs well with Tofu?
Build contrast around tofu's moist interior: fragrant hot oil, toasted seeds, browned surfaces or a concentrated fermented seasoning can provide definition. A thin sauce clings better to small pieces than a watery bath. For European preparations, roast-pepper emulsions and wine braises work through controlled absorption and browning; they need their own balance rather than a direct replacement of meat by weight.
