What goes with Espresso?
Espresso is a concentrated aqueous coffee extract containing dissolved roast products, acids and bitter compounds, with dispersed oils and very fine particles. Crema contributes a temporary foam rather than lasting thickness. This profile refers to an unsweetened medium-roast shot: its water must be counted in pastry, dough and sauce formulas, and its flavour concentration cannot be exchanged spoon-for-spoon with instant coffee.

Pairing principles
What pairs well with Espresso?
Milk, nuts and chocolate provide sweetness or fat against espresso's bitterness, but too much dark cocoa can make the finish heavy. In savoury preparations, use coffee as a measured roasted accent against cheese, mushrooms or rich meat, with enough moisture to avoid a scorched coating. Separate the need for coffee flavour from the need to thicken the surrounding preparation.
