Sweeteners · Food pairing guide
What goes with Jaggery?
Cane jaggery retains more of the concentrated cane-juice character than refined white sugar. Blocks can vary in moisture, grain and colour, and may contain fine sediment that merits straining after dissolution. Its principal role is still sweetness: the darker, slightly earthy finish does not make it salty or strongly umami. Select the batch for flavour as well as colour.

Pairing principles
What pairs well with Jaggery?
Use toasted seeds and coconut to give the sweetness a dry, nutty counterweight, or tamarind to define a sharper finish. Dairy makes the cane character rounder but exposes any gritty crystals or excessive acidity. In savoury food, keep jaggery subordinate to bitter vegetables, roasted alliums or liver, and provide enough acid or spice that the result remains an appetiser rather than a sweet glaze.
