What goes with Sesame?
Sesame (Sesamum indicum) is an oil-rich seed composed of approximately 48–55% lipids, 18–22% protein, 12–15% carbohydrates and 5–7% dietary fibre. The lipid fraction is dominated by oleic and linoleic acids, while unique lignans such as sesamin, sesamolin and sesamol provide exceptional oxidative stability. Sesame also contains tocopherols, phytosterols, minerals and numerous volatile compounds that develop during roasting.
