What goes with Nameko?
Nameko is valued as much for its slippery amber cap as for its mild earthy taste. Its natural surface coating gives a small amount of cooking liquid a light, glossy body without cream. The short stem provides a firmer centre beneath that smooth cap. Fresh mushrooms are the reference here; salted or bottled nameko need separate allowance for their preserving liquid.

Pairing principles
What pairs well with Nameko?
Textural neighbours are especially useful: soft tofu extends the silkiness, spring onion interrupts it with a clean crunch, and a delicate fish benefits from a spoonable mushroom sauce. Sweet wine or fragrant basil can pull the mushroom towards a savoury-sweet course, provided its earthy flavour remains clear. Keep creamy sauces light enough that the cap coating still has a role.
