What goes with Ponzu?
This profile uses ponzu shoyu, a thin citrus-and-soy seasoning with a little sweetness and an infused savoury base. A reference mixture combines lemon with some orange juice, Japanese soy sauce, boiled mirin, kombu and bonito, then removes the solids. Other citrus combinations and commercial formulas vary. The presence of soy and fish ingredients must be established from the actual product, not inferred from the name alone.

Pairing principles
What pairs well with Ponzu?
Lean fish and soft tofu let the sauce remain expressive without requiring a large quantity. Toasted sesame adds oily body and a nutty finish, while sliced spring onion supplies a separate fresh bite. Rich cheese, cured pork or crisp rice need controlled contact: a thin gel, small emulsified filling or lightly soaked inner layer can provide acidity while leaving an exterior dry.
